Meal #4

This is a simple one pan dish that I often make (with some variations) when I’m hungry and don’t have a lot of time to prepare a meal for two.

Ingredients:

  • 2 cups of dried bowtie pasta
  • 1.5 cups of water
  • 1 TBSP of olive oil
  • 1/2 cup of sweet white wine
  • 1 minced clove of garlic
  • 1 TBSP of unsalted butter
  • 1 TBSP of Parmesan Cheese
  • 1 TBSP of lemon juice
  • 2 TBSPs of capers (drained)
  • 2 cups of chicken, crab, shrimp, or lobster cubed (protein)
  • 1 cup of shredded Italian cheese

Spices:

  • 2 TBSP of Italian seasoning
  • 1 TBSP of dried onion flakes
  • 1 TBSP of red pepper flakes

Gear:

  • Skillet
  • Large wooden spoon

Directions:

  • Lightly mix all the oil, water, wine, and the garlic into the skillet.
  • Heat the stove top to medium high.
  • Add the pasta when the water starts to boil.
  • Spread all of the spice on top of the pasta.
  • Turn the heat to medium low for three minutes.
  • Add the butter and lightly stir for a couple of minutes.
  • Add the Parmesan Cheese and lightly stir for a couple of minutes.
  • Add the lemon juice and lightly stir for a couple of minutes.
  • Add the capers and lightly stir for a couple of minutes.
  • Add the protein and lightly stir for a couple of minutes.
  • Top with the rest of the cheese and turn to heat to lowest setting for a couple of minutes.

This meal is best with steamed asparagus, garlic bread, and a light wine.
