Meal #4: Lemon Capered Bowties
This is a simple one pan dish that I often make (with some variations) when I’m hungry and don’t have a lot of time to prepare a meal for two.
Ingredients:
- 2 cups of dried bowtie pasta
- 1.5 cups of water
- 1 TBSP of olive oil
- 1/2 cup of sweet white wine
- 1 minced clove of garlic
- 1 TBSP of unsalted butter
- 1 TBSP of Parmesan Cheese
- 1 TBSP of lemon juice
- 2 TBSPs of capers (drained)
- 2 cups of chicken, crab, shrimp, or lobster cubed (protein)
- 1 cup of shredded Italian cheese
Spices:
- 2 TBSP of Italian seasoning
- 1 TBSP of dried onion flakes
- 1 TBSP of red pepper flakes
Gear:
- Skillet
- Large wooden spoon
Directions:
- Lightly mix all the oil, water, wine, and the garlic into the skillet.
- Heat the stove top to medium high.
- Add the pasta when the water starts to boil.
- Spread all of the spice on top of the pasta.
- Turn the heat to medium low for three minutes.
- Add the butter and lightly stir for a couple of minutes.
- Add the Parmesan Cheese and lightly stir for a couple of minutes.
- Add the lemon juice and lightly stir for a couple of minutes.
- Add the capers and lightly stir for a couple of minutes.
- Add the protein and lightly stir for a couple of minutes.
- Top with the rest of the cheese and turn to heat to lowest setting for a couple of minutes.
This meal is best with steamed asparagus, garlic bread, and a light wine.
