Meal #1: Salmon Patties with Dill Mayonnaise

As I need to start putting content on my site, I felt that a reasonable place to start is by focusing on one area. In this case, a recipe of one of my favorite meals. I got the spicessalmon patties and some delicious ice cream from the North Market in Columbus, Ohio. The oils and the dill were from Medbery Marketplace in Roscoe Village.

The mayonnaise should be prepared first. Whip together 4 tablespoons of mayonnaise, 4 teaspoons of lime juice & 4 pinches of dill. Chill for an hour.

The oils are next. The blend should be 3 tablespoons of olive oil, 1 tablespoon of basil oil & 1 tablespoon of truffle oil. Let sit for an hour. The truffle oil may be a little strong, I could have also used 2 tablespoons of basil oil instead.

The salmon patties are readied to be grilled. We used four patties for the recipe. Prepare the grill by brushing on a little of the prepared oil. Sprinkle 1 pinch of chipotle seasoning on each patty. Heat grill to 250 degrees. It usually takes about 10 minutes to heat the rack to the right temperature. Place patties with the spices up. Gently brush part of the oil on the patties. Grill for 4 minutes. Flip, sprinkle the chipotle spice on patties, brush oil on patties. Grill for four more minutes. Repeat one more on each side. Serve the patties with the mayonnaise.

The meal worked really well with a seaweed salad, rosemary and lemon potatoes, dinner rolls & a nicely chilled Gewurztraminer.
